Les Hauts de Milly is a second label produced for us by the outstanding and well-established artisanal Chablis producer Domaine Bernard Defaix. It all began with Bernard and Monique Defaix acquiring two hectares of prime Chablis vineyards in 1959. After decades of hard work and determination, the estate has grown to 27 hectares in Chablis and 6 hectares in Rully (Cote de Chalonnaise).
Since the late 1990's the Domaine has been managed by Bernard and Monique's two sons Sylvain and Didier Defaix. Didier manages the vineyards while Sylvain is in charge of vinification and the cellar. Helene Jaeger-Defaix, the wife of Didier, manages the day to day business of the domain and oversees the family's Rully vineyards.
The winery and vineyards are located in the village of Milly, less than 1-kilometer north-west of Chablis village. The Domaine was certified organic in 2009, and all farming adheres to traditional methods, relying only on plowing and biodynamic preparations for soil maintenance. The wines here are impeccable examples of the region and showcase the deep limestone soils that have made Chablis world famous.
The 2018 Chablis is grown in classic Kimmeridgian limestone and is raised in 100% stainless steel. In your glass, a beautiful nose of oyster shell, Meyer lemon, and white flowers greets you and continues to offer complexity as it warms. There is excellent tension of fruit on the palate that leans towards lemon-lime, salty mineral notes, and chalk, leading to a long, lifted finish.
